In an ideal world you want to start clean and on the straight and narrow. This is the best time for all the spectators to inspect the props and understand the restrictions and parameters of the situation so that when you break them and manage the impossible, they can truly comprehend the miracle.
A simple example would be, if you pull out a deck of cards and do a trick, a layman will certainly suspect a trick deck (I don’t know why, but they do), that is why they can get grabby. Their amazement is temporarily postponed while they reassure themselves the deck is straight. Then they appreciate the magic. But by then the moment has been lost, the straight between eyes knockout punch has become a limp jab. 
Other alternatives are that you have to refuse to show them the deck because it is indeed gimmicked, or they snatch the deck out of your hands and find the secret.
The last two can be avoided by ditching or ringing out the gimmick and ending clean but you have still lost that moment.
If you want to make that climax as powerful as possible you must ring-in the gaff after everyone is convinced the constraints of the situation are genuine.
You will also lose the awkwardness of the grabbing drunk or family or indeed drunk family member.
All you need to do is a simple switch and you can be as creative as you like, it is definitely worth it. I even switch in a 10” key ring for my linking rings routine after they have come back from being inspected by the audience. I don’t want them looking for a hole in the rings despite all my convincers, I want them to know there is no hole right from the get-go.
